Cabbage Apple Delight

Ingredients

  • Sliced red cabbage 1
  • Medium apples 2
  • Medium onion 1
  • Vinegar ½ cup
  • Oil 1 tbsp
  • Cloves 2
  • Cinnamon
  • Plain flour 1 tbsp
  • Water ½ liter
  • Lemon juice as required
  • Salt to taste
  • Artificial sweetener to taste
  • Whole black peppers 3-4

Steps:

  • Heat oil in a pan.
  • Sauté onion for few minutes.
  • Add apples and cook for some minutes.
  • Add all other ingredients except cabbage.
  • Add cabbage and cook on low flame by covering.
  • When cabbage cooked add plain flour and keep stirring.
  • Serve immediately.

Sweet and Sour Vegetables

Ingredients

  • Onion sliced 1
  • Red and yellow capsicum 2
  • Cabbage chopped ½ cup
  • Vinegar 1 tbsp
  • French beans ½ cup
  • Sugar to taste
  • Turmeric powder 1 tsp
  • Oil 1 tbsp
  • Green chilies chopped 2 tbsp
  • Cumin seeds 1 tsp
  • Fenugreek seeds 1 tsp
  • Aniseed 1 tsp

Steps:

  • Heat oil in a pan and fry onion till transparent.
  • Add onion, cumin, fenugreek and aniseeds and fry for some minutes.
  • Add green chilies and turmeric.
  • Add cabbage, French beans, capsicum and sugar.
  • Cook on low flame for 5-7 minutes.
  • Add pepper and sprinkle vinegar on the top of vegetables.
  • Cook for further 5 minutes till vegetables soft.

Fruit Fun Recipe

Ingredients

  • Apples 100gms
  • Guavas 75gms
  • Sweet lime 1
  • Cottage cheese 50gms
  • Mint leaves 1 bunch
  • Lemon juice 1 tbsp
  • Salt to pepper to taste

Recipe:

  • Clean and wash mint leaves.
  • Grind mint leaves with salt, pepper and lemon juice.
  • Cut cheese in cubes.
  • Cut all fruits in cubes.
  • Mix all the fruits and ingredients.
  • Chill and serve.

Dry Thai Chicken

Ingredients

  • Boneless chicken ½ kg
  • Oil 2-3 tbsp
  • White pepper ½ tsp
  • Salt 1 tsp
  • Crushed garlic 1 tbsp
  • Soya sauce 1 tsp
  • Green chilies 4-5
  • Fresh red chilies 4
  • Ginger crushed 1 tbsp
  • Crushed red pepper 1 tsp
  • Spring onion leaves 4 tbsp
  • Mushrooms 4
  • Oyster sauce 2 tbsp
  • Vinegar 2 tbsp
  • Fish sauce 1 tbsp

Method:

Heat oil and fry crushed garlic till brown. Then fry chicken slices for 2 minutes. Add all the remaining ingredients, mix well and cook for 5-10 minutes. Dish out in serving plate and serve with steamed rice.

Three Beans Salad

Ingredients

  • Black eyed beans boiled 1 cup
  • Rajma boiled 1 cup
  • Tomatoes chopped 1
  • Onion chopped 2-3 tbsp
  • Chick peas boiled 1 cup
  • Coriander leaves chopped 2 tbsp
  • Green chilies chopped 5-6
  • Garlic paste ½ tsp
  • Lemon juice 4 tbsp
  • Chat masala 2 tsp
  • Black pepper powder 2 tsp
  • Salt to taste
  • Olive oil 2 tbsp

Cooking directions:

Take a bowl and put lemon juice in it. Mix salt, chat masala, black pepper powder, garlic paste, olive oil finely. Add all the beans as rajma, chick peas, black eyed peas, chopped onion, tomatoes and green chilies in that bowl and mix finely. Serve it. it is light weight food for lunch time.
